Ba Mee Thai Noodle House: This sophisticated Thai spot showcases their chef’s artistry with a glass-encased display where patrons can witness their noodles being hand-made.

Bauman’s on Oak – Oregon cidery Bauman’s is opening a taproom in Southeast Portland with 30 taps of their locally-made ciders paired with a menu featuring ingredients sourced from their farm.

Hansik – This elevated Korean restaurant aims to serve environmentally-friendly dishes that get inspiration from Korean barbecue, sushi dishes, and sake.

The High Ground – Located just outside of Portland in Hillsboro, this Mexican cocktail bar pairs Mezcal with authentic, yet modern Mexican dishes and delectable desserts.

Le Clown – This French-inspired pop-up celebrates creativity in modern French dishes with a rotating menu and fun, inspiring takes on traditional French cuisine.

The Love Shack –  This boutique cocktail bar serves an eclectic mix of craft cocktails that look as fun as they taste, which are complemented by an assortment of fun twists on classic bar snacks.

Mémoire Cà Phê – This authentic Vietnamese American brunch experience comes from the group of Portland-based Vietnamese American entrepreneurs behind other local gems such as Matta, HeyDay, and Portland Cà Phê.

Moonshot Tavern – Paying homage to his southern roots, restaurant owner Kevin Jones is mixing Pacific Northwest ingredients with Creole flavors, serving up dishes that remind him of his childhood, family, and bringing unique dishes to Portland.

Portland Pickles Public House – Opened by the Portland Pickles, the city’s collegiate wood-bat baseball team, this sports bar is designed to cater to the diverse tastes in sports of the city and serve as a base for Pickles fans.

Silk Road – Chinese-American restaurant and cocktail bar takes inspiration from Eurasian trade routes known as the Silk Road, featuring ingredients that remind their team of their namesake.

Yosu Sushi – Leaning into comfort food sushi, Yosu specializes in traditional, standard sushi rolls that offer a familiar taste in a homey atmosphere decorated with lanterns and paper flowers.

Seattle

Cardoon – Combining the owner’s Chinese and German heritage, this menu offers unique fusion dishes that you won’t be able to find anywhere else while offering a cozy cafe bar atmosphere.

Haerfest – This elevated eatery offers handmade pastas with a luxury twist alongside other indulgent starters and protein-focused dishes.

La Dive – This fun and vibrant wine bar offers a wide variety of unique wines, cocktails, and beers, all of which can be paired with modern bar food and late night snacks.

Maiz Taqueria – Claiming to be “custodians of cultural heritage”, this Mexican restaurant aims to celebrate the importance of corn in Mexican culture by making it the star of many authentic menu items.

Mystic Motel – This pop-up bar offers a unique escape from the usual Seattle scenery – it aims to transport guests directly into a vibrant and eclectic Wes Anderson film-scape right in Capitol Hill.

Old Salt Ballard – Chef Liz Kenyon used lockdown as a time to perfect their bagel recipe, and Old Salt Ballard gives those perfectly fluffy-yet-crispy bagels their time to shine.

Oyster Cellar – Getting inspiration from New York City’s historic oyster bars, this new spot aims to provide affordability and accessibility to an upper-class staple: fresh oysters in an elevated atmosphere.

Ramie – Serving elevated yet contemporary Vietnamese fare, this new restaurant comes from the Nguyen siblings behind Ba Sa who are aiming to provide a fresh perspective on Vietnamese dishes.

Sma5h – Classic smash burgers and an array of loaded sides with a twist – everything is Halal-certified.

Sophon – Paying homage to Khmer Cuisine, this Cambodian restaurant aims to use their dishes to foster community, educate about cultural history, and amplify Cambodian voices.

Spice Waala – Serving up world-class Indian street food, this new eatery also focuses on giving back to their community through meal donation programs.
